Apoptosis inductor extracted from potato, potato foodstuff containing the inductor, and processed product thereof

Abstract

An apoptosis inductor is formed of an anthocyanin-containing extract obtained from a potato containing anthocyanine in the skin and flesh thereof. The potato is a potato of cultivated species, such as Solanum tuberosum ssp. andigena L. and S. phureja Juz. et Buk., or of hybrid species based on the cultivated species.

What is claimed is:  
     
         1 . An apoptosis inductor formed of an anthocyanin-containing extract obtained from a potato containing anthocyanine in skin and flesh.  
     
     
         2 . The apoptosis inductor according to  claim 1 , wherein said potato is a potato of cultivated species, including  Solanum tuberosum  ssp. andigena L. and  S. phureja  Juz. et Buk., or of hybrid species based on the cultivated species.  
     
     
         3 . A potato foodstuff containing the apoptosis inductor of  claim 1  and exhibiting a color capable of being expressed with an anthocyanin pigment.  
     
     
         4 . A processed product of potato containing the apoptosis inductor of  claim 1.
