Abstract

The invention provides a method of producing, in a plant, oil having an erucic acid content above 66% erucic acid, the method comprising (i) expressing in the plant nucleic acid encoding an elongase and nucleic acid encoding an acyltransferase enzyme; and (ii) extracting oil from the plant. Corresponding plants seeds and oils are also provided.

1 . Oil extracted from a  Brassica napus  plant, wherein said oil contains more than 66% erucic acid. 
     
     
         2 . The oil of  claim 1  wherein said  Brassica napus  plant is a transgenic high erucic acid  Brassica napus  plant, which expresses a 2-acyltransferase enzyme and an elongase, wherein said elongase is a  Brassica napus  FAE1-2 elongase encoded by SEQ ID NO: 2. 
     
     
         3 . The oil according to  claim 2 , wherein the 2-acyltransferase is from  L. douglassi.
