Sweetener compositions and foods, beverages, and consumable products made thereof

Abstract

Provided herein are compositions with enhanced sweetness or reduced caloric content per weight when compared to the sweetener carbohydrate or sweetener polyol component thereof, and methods for the preparation thereof.

         29 . A consumable product comprising a sweetener composition comprising one or more sweetener carbohydrates and/or sweetener polyols, and 0.05-4% carrier compound weight/weight relative to a sum of total sweetener carbohydrate and/or sweetener polyols; wherein the sweetener composition is made by mixing the one or more sweetener carbohydrates and/or sweetener polyols with a carrier compound precursor and a catalyst such that a reaction between the carrier compound precursor and the catalyst occurs in the presence of the one or more sweetener carbohydrates and/or sweetener polyols to form the sweetener composition; wherein the sweetener composition has enhanced sweetness compared to a control composition; and wherein the control composition consists of the same contents by identity and quantity as the one or more sweetener carbohydrates and/or sweetener polyols, wherein the consumable product is selected from the group consisting of a food product, a beverage product, a pharmaceutical product, a hygiene product, or a chewing gum.

         31 . The consumable product of  claim 29 , wherein the consumable product is less bitter than a control product, wherein the control product is identical to the consumable product but lacks the sweetener composition of  claim 29 .

         34 . The consumable product of  claim 29 , wherein the one or more sweetener carbohydrates are selected from the group consisting of sucrose, glucose, fructose, maltose, lactose, high fructose corn syrup, high maltose corn syrup, and a combination thereof. 
     
     
         35 . The consumable product of  claim 29 , wherein the carrier compound is silica. 
     
     
         36 . The consumable product of  claim 29 , wherein the consumable product contains up to 2.0% silica.

         38 . The consumable product of  claim 37 , wherein the consumable product contains up to 0.5% silica.

The consumable product of  claim 29 , wherein the consumable product is a beverage product selected from the group consisting of a soft drink, flavored water, juice, sports drink, energy drink, alcoholic beverage, liqueur, carbonated beverage, caffeinated beverage, coffee, cocoa, tea, and dairy drink. 
     
     
         46 . The consumable product of  claim 29 , wherein the consumable product is a pharmaceutical product selected from the group consisting of a cough syrup, capsule, and tablet. 
     
     
         47 . The consumable product of  claim 29 , wherein the consumable product is a hygiene product selected from the group consisting of tooth paste and mouth wash. 
     
     
         48 . The consumable product of  claim 29 , wherein the one or more sweetener carbohydrates are one or more monosaccharides and/or disaccharides. 
     
     
         49 . The consumable product of  claim 29 , wherein the one or more sweetener polyols are selected from the group consisting of xylitol, maltitol, erythritol, sorbitol, threitol, arabitol, hydrogenated starch hydrolysates, isomalt, lactitol, mannitol, and galactitol (dulcitol).
