Abstract

The present invention includes systems, methods and compositions related to the production and use of chemically modified cannabinoid food and beverage additives having enhanced water solubility and stability.

What is claimed is: 
     
         1 . A chemically modified cannabinoid food and beverage additive having enhanced water solubility comprising:
 an aqueous solution;   at least one chemically modified cannabinoid dissolved in said aqueous solution, wherein said chemically modified cannabinoid comprises an water soluble acetylated cannabinoid glycoside; and   wherein said consumable fluid composition may be introduced to a food or beverage, and wherein said water soluble acetylated cannabinoid glycoside exhibits an enhanced ability to stay in solution compared to a cannabinoid glycoside, and an unmodified cannabinoid.   
     
     
         2 . The consumable fluid composition of  claim 1 , wherein said one or more water soluble acetylated cannabinoid glycosides comprises a water soluble O-acetyl cannabinoid glycoside. 
     
     
         3 . The consumable fluid composition of  claim 1 , wherein said water soluble acetylated cannabinoid glycoside comprises a water soluble acetylated cannabinoid glycoside generated in vivo through incubation of a cannabinoid in a tobacco cell suspension culture. 
     
     
         4 . The consumable fluid composition of  claim 1 , wherein said water soluble acetylated cannabinoid glycoside comprises a water soluble acetylated cannabinoid glycoside generated in vitro through incubation with a glycosyltransferase protein having glycosylation activity towards one or more cannabinoids and acetyltransferase protein having acetylation activity toward one or more cannabinoids. 
     
     
         5 . The consumable fluid composition of  claim 1 , wherein said glycosyltransferase protein having glycosylation activity towards one or more cannabinoids comprises a glycosyltransferase protein from tobacco selected from the group consisting of: NtGT3; NtGT4; and NtGT5, and a homolog or ortholog of NtGT3, NtGT4, and NtGT5 having glycosylation activity towards one or more cannabinoids. 
     
     
         6 . The consumable fluid composition of  claim 1 , wherein said aqueous solution comprises an aqueous solution selected from the group consisting of: water, saline, purified water, propylene glycol, deionized water, or combinations thereof. 
     
     
         7 . The consumable fluid composition of  claim 1 , wherein said composition is added to a quantity of an alcohol beverage, wherein said quantity of alcohol is selected from the group consisting of: a quantity of ethanol, a quantity of beer, a quantity of wine, and a quantity of distilled spirits. 
     
     
         8 . The consumable fluid composition of  claim 1 , and further comprising at least one buffer. 
     
     
         9 . The consumable fluid composition of  claim 8 , wherein said at least one buffer maintains said aqueous solution at a pH at or below 7.4. 
     
     
         10 . The consumable fluid composition of  claim 1 , wherein the cannabinoid to be chemically modified into said water soluble acetylated cannabinoid glycoside comprises a cannabinoid from hemp. 
     
     
         11 . The consumable fluid composition of  claim 10 , wherein said cannabinoid from hemp comprises is a non-psychoactive cannabinoid. 
     
     
         12 . A chemically modified cannabinoid food additive comprising:
 a consumable food additive composition of claim comprising at least one chemically modified cannabinoid provided in a dehydrated powder or liquid form, and wherein said chemically modified cannabinoid comprises a cannabinoid glycoside, an acetylated cannabinoid glycoside, or a mixture of both; and   wherein said consumable food additive composition may be introduced to a food or beverage, and wherein said cannabinoid glycoside, and said acetylated cannabinoid glycoside exhibit enhanced solubility compared to unmodified cannabinoids.   
     
     
         13 . The consumable food additive composition of  claim 12 , wherein said one or more water soluble acetylated cannabinoid glycosides comprises a water soluble O-acetyl cannabinoid glycoside. 
     
     
         14 . The consumable food additive composition of  claim 12 , wherein said cannabinoid glycoside comprises a cannabinoid glycoside having one, two or three sugar moieties. 
     
     
         15 . The consumable food additive composition of  claim 12 , wherein said water soluble acetylated cannabinoid glycoside comprises a water soluble acetylated cannabinoid glycoside generated in vivo through incubation of a cannabinoid in a tobacco cell suspension culture. 
     
     
         16 . The consumable food additive composition of  claim 12 , wherein said water soluble acetylated cannabinoid glycoside comprises a water soluble acetylated cannabinoid glycoside generated in vitro through incubation with a glycosyltransferase protein having glycosylation activity towards one or more cannabinoids and acetyltransferase protein having acetylation activity toward one or more cannabinoids. 
     
     
         17 . The consumable food additive composition of  claim 12 , wherein said glycosyltransferase protein having glycosylation activity towards one or more cannabinoids comprises a glycosyltransferase protein from tobacco selected from the group consisting of: NtGT3; NtGT4; and NtGT5, and a homolog or ortholog of NtGT3, NtGT4, and NtGT5 having glycosylation activity towards one or more cannabinoids. 
     
     
         18 . A consumable food additive composition of  claim 12 , and further comprising a food additive polysaccharide. 
     
     
         19 . A consumable food additive composition of  claim 18 , wherein said food additive polysaccharide comprises dextrin, and maltodextrin. 
     
     
         20 . A consumable food additive composition of  claim 12 , and further comprising an emulsifier. 
     
     
         21 . A consumable food additive composition of  claim 20 , wherein said emulsifier is selected from the group consisting of: gum arabic, modified starch, pectin, xanthan gum, gum ghatti, gum tragacanth, fenugreek gum, mesquite gum, mono-glycerides and di-glycerides of long chain fatty acids, sucrose monoesters, sorbitan esters, polyethoxylated glycerols, stearic acid, palmitic acid, mono-glycerides, di-glycerides, propylene glycol esters, lecithin, lactylated mono- and di-glycerides, propylene glycol monoesters, polyglycerol esters, diacetylated tartaric acid esters of mono- and di-glycerides, citric acid esters of monoglycerides, stearoyl-2-lactylates, polysorbates, succinylated monoglycerides, acetylated monoglycerides, ethoxylated monoglycerides, quillaia, whey protein isolate, casein, soy protein, vegetable protein, pullulan, sodium alginate, guar gum, locust bean gum, tragacanth gum, tamarind gum, carrageenan, furcellaran, Gellan gum, psyllium, curdlan, konjac mannan, agar, and cellulose derivatives, or combinations thereof. 
     
     
         22 . A consumable food additive composition of  claim 12 , and further comprising a flavoring agent. 
     
     
         23 . A consumable food additive composition of  claim 22 , wherein said flavoring agent comprises a flavoring agent selected from the group consisting of: Sucrose (sugar), glucose, fructose, sorbitol, mannitol, corn syrup, high fructose corn syrup, saccharin, aspartame, sucralose, acesulfame potassium (acesulfame-K), and neotame. 
     
     
         24 . A consumable food additive composition of  claim 12 , and further comprising a coloring agent, and wherein said coloring agent comprises a coloring agent selected from the group consisting of: FD&C Blue Nos. 1 and 2, FD&C Green No. 3, FD&C Red Nos. 3 and 40, FD&C Yellow Nos. 5 and 6, Orange B, Citrus Red No. 2, annatto extract, beta-carotene, grape skin extract, cochineal extract or carmine, paprika oleoresin, caramel color, fruit and vegetable juices, saffron, Monosodium glutamate (MSG), hydrolyzed soy protein, autolyzed yeast extract, disodium guanylate, and inosinate, or combinations thereof. 
     
     
         25 . A consumable food additive composition of  claim 12 , and further comprising a surfactant. 
     
     
         26 . A consumable food additive composition of  claim 25 , wherein said surfactant comprises a surfactant selected from the group consisting of glycerol monostearate and polysorbate 80. 
     
     
         27 . A consumable food additive composition of  claim 12 , and further comprising a preservative, and wherein said preservative comprises a preservative selected from the group consisting of: ascorbic acid, citric acid, sodium benzoate, calcium propionate, sodium erythorbate, sodium nitrite, calcium sorbate, potassium sorbate, BHA, BHT, EDTA, tocopherols. 
     
     
         28 . The consumable fluid composition of  claim 12 , wherein the cannabinoid to be chemically modified cannabinoid comprises a cannabinoid from hemp. 
     
     
         29 . A consumable food additive composition of  claim 12 , wherein said chemically modified cannabinoid food additive is added to an alcohol beverage, and wherein said alcohol beverage is selected from the group consisting of: ethanol, beer, wine, and distilled spirits. 
     
     
         30 . A consumable beverage composition comprising:
 an alcohol continuing consumable beverage containing a chemically modified water soluble cannabinoid, wherein said chemically modified water soluble cannabinoid comprises a glycosylated cannabinoid glycoside, an acetylated cannabinoid glycoside, or a mixture of both.
