Claims

Abstract

In one aspect, the invention is directed to polypeptides having an amylase activity, polynucleotides encoding the polypeptides, and methods for making and using these polynucleotides and polypeptides. In one aspect, the polypeptides of the invention can be used as amylases, for example, alpha amylases, to catalyze the hydrolysis of starch into sugars. In one aspect, the invention provides delayed release compositions comprising a desired ingredient coated by a latex polymer coating.

What is claimed is: 
     
         1 . A composition comprising a polypeptide having glucoamylase activity, wherein the polypeptide is set forth in the amino acid sequence having at least 85% sequence identity to SEQ ID NO:594, and the polypeptide having glucoamylase activity hydrolyzes a starch. 
     
     
         2 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , wherein the polypeptide is set forth in the amino acid sequence having at least 85% sequence identity to SEQ ID NO:594, and lacking a signal sequence. 
     
     
         3 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , wherein the polypeptide is set forth in the amino acid sequence having at least 85% sequence identity to SEQ ID NO:594, and lacking a carbohydrate binding module. 
     
     
         4 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , wherein the polypeptide is set forth in the amino acid sequence having at least 85% sequence identity to SEQ ID NO:594, and lacking a signal sequence and a carbohydrate binding module. 
     
     
         5 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , wherein the polypeptide is an enzymatically active fragment of the amino acid sequence having at least 85% sequence identity to SEQ ID NO:594, and the enzymatically active fragment has glucoamylase activity. 
     
     
         6 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , wherein the polypeptide is set forth in the amino acid sequence having at least 85% sequence identity to SEQ ID NO:594, is encoded by a nucleic acid sequence. 
     
     
         7 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , wherein the starch is at pH 2.5 to pH 6.0. 
     
     
         8 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , wherein the starch hydrolysis is at a temperature from 50 degrees C. to 85 degrees C. 
     
     
         9 . The composition comprising a polypeptide having glucoamylase activity of  claim 1 , and a second enzyme. 
     
     
         10 . The composition comprising a polypeptide having glucoamylase activity of  claim 10 , wherein the second enzyme is selected from the group consisting of: a second glucoamylase, a alpha amylase, a beta-amylase, a cellulase, a protease, a xylanase, or any combination thereof. 
     
     
         11 . A method for hydrolysing starch comprising: providing the composition of  claim 9 ; providing the starch, wherein the starch is isolated or derived from a rice, germinated rice, corn, barley, wheat, legumes, sweet potato, milo, sorghum, rye, or any combination thereof; and the composition hydrolyzes the starch. 
     
     
         12 . A method for liquefying starch comprising: providing the composition of  claim 1 ; providing the starch; contacting the composition of  claim 1  and the starch wherein the composition liquefies the starch. 
     
     
         13 . A method for producing a high-maltose syrup, a high-glucose syrup, or a mixed syrup comprising: providing the composition of  claim 1 ; providing a starch; contacting the composition of  claim 1  to generate a soluble starch hydrolysate; and, saccharifying the soluble starch hydrolysate to generate the syrup.
