Abstract

A bacterial composition and method that inhibits E. coli O157:H7 growth by as much as 93% and Salmonella growth by as much as 97%, together with commensurate inhibition rates against the Big-Six Escherichia coli strains referred to as the non-O157 STECs that include E. coli O121:H19; E. coli O45:H2; E. coli O103:H11; E. coli O145, E. coli O26:H11; and E. coli O111. The composition is constituted of various combinations of the following unique pathogen-inhibiting bacteria: (1) Lactobacillus animalis ; (2) Enterococcus faecium (3) Pediococcus acidilactici.

1 . A probiotic composition comprising a number of viable  Lactobacillus animalis  bacteria wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 50% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         2 . The probiotic composition recited in  claim 1  wherein the  Lactobacillus animalis  bacteria is  Lactobacillus animalis  strain MB101 having ATCC Accession Number PTA-121710. 
     
     
         3 . The probiotic composition recited in  claim 1  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 80% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         4 . The probiotic composition recited in  claim 3  wherein the  Lactobacillus animalis  bacteria is  Lactobacillus animalis  strain MB101 having ATCC Accession Number PTA-121710. 
     
     
         5 . The probiotic composition recited in  claim 1  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 90% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         6 . The probiotic composition recited in  claim 5  wherein the  Lactobacillus animalis  bacteria is  Lactobacillus animalis  strain MB101 having ATCC Accession Number PTA-121710. 
     
     
         7 . The probiotic composition recited in  claim 1  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 93.9% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         8 . The probiotic composition recited in  claim 7  wherein the  Lactobacillus animalis  bacteria is  Lactobacillus animalis  strain MB101 having ATCC Accession Number PTA-121710. 
     
     
         9 . The probiotic composition recited in  claim 1  wherein the  Lactobacillus animalis  bacteria is  Lactobacillus animalis  strain MB102 having ATCC Accession Number PTA-121711. 
     
     
         10 . The probiotic composition recited in  claim 9  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 80% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         11 . The probiotic composition recited in  claim 9  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 90% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         12 . The probiotic composition recited in  claim 9  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 90.1% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         13 . A probiotic composition comprising a number of viable  Enterococcus faecium  bacteria wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 80% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         14 . The probiotic composition recited in  claim 13  wherein the  Enterococcus faecium  bacteria is  Enterococcus faecium  strain MB505 having ATCC Accession Number PTA-121709. 
     
     
         15 . The probiotic composition recited in  claim 13  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 88.2% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         16 . The probiotic composition recited in  claim 15  wherein the  Enterococcus faecium  bacteria is  Enterococcus faecium  strain MB505 having ATCC Accession Number PTA-121709. 
     
     
         17 . A probiotic composition comprising a number of viable  Pediococcus acidilactici  bacteria wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 80% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         18 . The probiotic composition recited in  claim 17  wherein the  Pediococcus acidilactici  bacteria is  Pediococcus acidilactici  strain MB902 having ATCC Accession Number PTA-121712. 
     
     
         19 . The probiotic composition recited in  claim 17  wherein the composition has an  E. coli  O157:H7 growth inhibition rate of at least 85.2% when mixed with an equal number of viable  E. coli  O157:H7 bacteria. 
     
     
         20 . The probiotic composition recited in  claim 19  wherein the  Pediococcus acidilactici  bacteria is  Pediococcus acidilactici  strain MB902 having ATCC Accession Number PTA-121712.
