Abstract

The present disclosure relates to a dishmachine that includes one or more features directed to water, energy or material savings. The disclosed dishmachines are still capable of meeting the soil demands of the articles to be cleaned.

         2 . A method of washing dishes in a dishmachine comprising:
 (a) spraying wash water through at least one wash arm;   (b) collecting the wash water in a wash tank;   (c) draining a portion of the wash tank every wash cycle;   (d) spraying rinse water having a temperature of 165-180° F. through at least one rinse arm;   (e) collecting the rinse water in the wash tank;   (f) draining the entire wash tank after completing a predetermined number of wash cycles; and   (g) refilling the wash tank with water.   
     
     
         3 . The method of  claim 2 , wherein the dishmachine is a commercial dishmachine. 
     
     
         4 . The method of  claim 2 , wherein the dishmachine further comprises a controller. 
     
     
         5 . The method of  claim 2 , wherein the dishmachine does not include a heater. 
     
     
         6 . The method of  claim 2 , wherein the dishmachine is a door- or hood-style dishmachine. 
     
     
         7 . The method of  claim 2 , wherein the wash water has a temperature of 150 to 165° F. 
     
     
         8 . The method of  claim 2 , wherein the wash water has a temperature of 120 to 140° F.
