Siamenoside I Sweetened Compositions and Uses of the Same

Abstract

Sweetener compositions or sweetened compositions (such as beverages or beverage products) containing siamenoside I are provided herein, as well as methods of preparing the same. Methods of improving the flavor and/or temporal profile of sweetenable compositions, such as beverages, are also provided.

What is claimed: 
     
         1 . A beverage comprising:
 (i) a liquid matrix;   (ii) siamenoside I that is at least about 80% pure; and   (iii) at least one additional sweetener selected from the group consisting of: potassium acesulfame, saccharin and salts thereof; neohesperidin dihydrochalcone, glucosylated steviol glycosides (GSGs), mogroside V, glycyrrhizic acid and its salts, thaumatin, monellin, brazzein, erythritol, tagatose and psicose, and combinations thereof.   
     
     
         2 . The beverage of  claim 1 , wherein the beverage has a sweetness intensity equivalent to 10 Brix. 
     
     
         3 . The beverage of  claim 1 , wherein the beverage is acidic. 
     
     
         4 . The beverage of  claim 1 , further comprising phosphoric acid. 
     
     
         5 . The beverage of  claim 1 , further comprising citric acid. 
     
     
         6 . The beverage of  claim 1 , wherein the beverage is a carbonated beverage. 
     
     
         7 . The beverage of  claim 1 , wherein the beverage is a carbonated beverage selected from the group consisting of frozen carbonated beverages, enhanced sparkling beverages, cola; fruit-flavored sparkling beverages, ginger-ale, soft drinks and root beer. 
     
     
         8 . The beverage of  claim 1 , wherein the beverage is a fruit-flavored sparkling beverage selected from the group consisting of lemon-lime, orange, grape, strawberry, and pineapple fruit-flavored sparking beverages. 
     
     
         9 . The beverage of  claim 1 , wherein the beverage is a non-carbonated beverage. 
     
     
         10 . The beverage of  claim 1 , wherein the beverage is a non-carbonated beverage selected from the group consisting of fruit juice, fruit-flavored juice, juice drinks, nectars, vegetable juice, vegetable-flavored juice, sports drinks, energy drinks, enhanced water drinks, enhanced water with vitamins, near water drinks, coconut water, tea type drinks, coffee, cocoa drink, beverage containing milk components, and beverages containing cereal extracts and smoothies. 
     
     
         11 . The beverage of  claim 1 , wherein the at least one additional sweetener comprises: potassium acesulfame, saccharin, a salt of saccharin, neohesperidin dihydrochalcone or glucosylated steviol glycosides. 
     
     
         12 . The beverage of  claim 1 , wherein the at least one additional sweetener comprises: mogroside V. 
     
     
         13 . The beverage of  claim 1 , wherein the at least one additional sweetener comprises: glycyrrhizic acid, a salt of glycyrrhizic acid, thaumatin, monellin, or brazzein. 
     
     
         14 . The beverage of  claim 1 , wherein the at least one additional sweetener comprises erythritol. 
     
     
         15 . The beverage of  claim 1 , wherein the at least one additional sweetener comprises tagatose or psicose. 
     
     
         16 . The beverage of  claim 1 , further comprising one or more organic acid additive selected from the group consisting of a C2-C30 carboxylic acid, substituted hydroxyl C2-C30 carboxylic acid, benzoic acid, substituted benzoic acid, substituted cinnamic acid, hydroxyacid, substituted hydroxybenzoic acid, ani sic acid substituted cyclohexyl carboxylic acid, tannic acid, aconitic acid, lactic acid, tartaric acid, isocitric acid, gluconic acid, glucoheptanoic acid, adipic acid, hydroxycitric acid, malic acid, fruitaric acid, fumaric acid, maleic acid, succinic acid, chlorogenic acid, salicylic acid, creatine, caffeic acid, bile acid, acetic acid, ascorbic acid, alginic acid, erythorbic acid, polygiutamic acid, gluocono delta lactone, and alkali or alkaline earth metal salts thereof. 
     
     
         17 . The beverage of  claim 1 , further comprising one or more organic acid additive selected from the group consisting of a sodium, calcium, potassium or magnesium salt of citric acid, malic acid, tartaric acid, fumaric acid, lactic acid, alginic acid, ascorbic acid, benzoic acid, sorbic acid and adipic acid.
