Method for producing cultured meat by utilizing fbs substitute derived from butchery by-products
Abstract
The present invention relates to a method for producing cultured meat by utilizing a fetal bovine serum (FBS) substitute derived from butchery by-products and, more specifically, to: a method for preparing a medium additive (an FBS substitute) for culturing cultured meat prepared by the method; a medium composition for culturing cultured meat comprising the additive; and a method for preparing cultured meat by using same. By using the medium additive (the FBS substitute) for culturing cultured meat prepared by the unique method of the present invention, the traditional fetal bovine serum (FBS), which has a high unit cost and the ethical issue of having to be collected from live calves, is completely substituted or jointly used, and thus the amount of fetal bovine serum (FBS) use can be reduced and the product efficiency of the cultured meat can be enhanced. Further, by increasing the utilization of slaughter by-products which are inevitably generated during butchering of livestock for producing meat, the present invention provides the advantages of increasing the value of the butchery by-products and increasing economic advantages such as reduced disposal costs and increased incomes.
Claims
exact text as granted — not AI-modified1 . A method for preparing a medium additive for culturing cultured meat from butchery by-products, comprising:
(i) a step of obtaining serum or plasma from blood separated from animals other than humans as a by-product of butchering; (ii) a step of bleaching the obtained serum or plasma from the step (i); and (iii) a step of filtering the bleached serum or plasma obtained from the step (ii).
2 . The method of claim 1 , wherein the animal is one or more selected from the group consisting of cattle, pigs, and chickens.
3 . The method of claim 2 , wherein the cattle are 30 to 48 months of age, the chickens are 2 to 8 weeks of age, and the pigs are 180 days of age.
4 . The method of claim 1 , wherein the bleaching comprises mixing kaolin with the serum or plasma obtained in the step (i).
5 . The method of claim 1 , wherein the bleaching is performed at a temperature of 50 to 70° C.
6 . The method of claim 1 , wherein the filtering comprises filtering through pores sized 0.05 to 0.3 μm in diameter.
7 . The method of claim 6 , wherein the filtering further comprises a pre-filtering process through pores sized 2 μm to 25 μm in diameter.
8 . The method of claim 6 , wherein the filtering comprises using a membrane filter.
9 . The method of claim 8 , wherein the filtering further comprises using a method selected from the group consisting of filter paper, syringe filter, and combinations thereof.
10 . The method of claim 1 , wherein the method further comprises sterilization process after the filtering step of (iii).
11 . The method of claim 10 , wherein the sterilization is performed at a temperature of 50 to 70° C.

22 . A method for preparing cultured meat, comprising a step of proliferating muscle satellite cells using medium compositions for culturing cultured meat.
23 . The method of claim 22 , wherein the medium composition is for the proliferation of muscle satellite cells.
24 . The method of claim 22 , wherein the medium composition comprises, relative to 100 weight parts of serum-free medium:
1 to 20 weight parts of the medium additive for culturing cultured meat produced by the method of claim 1 ; and 0.5 to 1.5 weight parts of antibiotics/antimicrobials, and wherein the medium additive is for the proliferation of muscle satellite cells.
25 . The method of claim 24 , wherein the medium additive substitutes for or is used in conjunction with fetal bovine serum (FBS).
26 . The method of claim 24 , wherein the serum-free medium is at least one selected from the group consisting of Ham's 10 medium, Ham's 12 medium, Dulbecco's Modified Eagle Medium (DMEM), Minimum Essential Medium (MEM), MCDB-201 medium, and RPMI 1640 medium.
27 . The method of claim 24 , wherein the antibiotics/antimicrobials are at least one type of antibiotic selected from penicillin and streptomycin; and
at least one type of antifungal agent selected from amphotericin-B, clotrimazole, miconazole, ketoconazole, and nystatin.
28 . The method of claim 22 , wherein the medium composition additionally comprises fetal bovine serum (FBS).
29 . The method of claim 28 , wherein the medium composition comprises, relative to 100 weight parts of serum-free medium:
