Abstract

An antioxidant material of the present invention contains flavonoid aglycon and vitamin C. The flavonoid aglycon is eriodictyol and/or diosmetin obtained by treatment of a raw material containing flavonoid glycoside derived from lemons, limes, or sudachis to form the aglycones thereof. It is preferred that this antioxidant material be produced through a step of mixing the flavonoid aglycon and the vitamin C after the treatment to form the aglycones. The treatment to form the aglycones is glycosidase treatment using a β-glycosidase derived from a microorganism of the genus Aspergillus or Penicillium multicolor, or microbial fermentative treatment using a microorganism of the genus Aspergillus . An anti-deterioration agent and a food or beverage of the present invention contain the antioxidant material.

1 . An antioxidant material comprising a flavonoid aglycon and vitamin C, wherein the flavonoid aglycon is eriodictyol and/or diosmetin obtained by treatment of a raw material containing flavonoid glycosides derived from lemons, limes, or sudachis to form the aglycones thereof.  
   
   
       2 . The antioxidant material according to  claim 1 , wherein the antioxidant material is produced through a step of mixing the flavonoid aglycon and vitamin C after said treatment to form the aglycones.  
   
   
       3 . The antioxidant material according to  claim 1 , wherein said treatment to form the aglycones is glycosidase treatment using a glycosidase derived from a microorganism of the genus  Aspergillus.    
   
   
       4 . The antioxidant material according to  claim 1 , wherein said treatment to form the aglycones is glycosidase treatment using a β-glycosidase derived from  Penicillium  multicolor.  
   
   
       5 . The antioxidant material according to  claim 1 , wherein said treatment to form the aglycones is microbial fermentative treatment using a microorganism of the genus  Aspergillus.    
   
   
       6 . The antioxidant material according to  claim 5 , wherein said microbial fermentative treatment is initiated by inoculating the raw material with spores or cells of the microorganism of the genus  Aspergillus  and terminated before the completion of subsequent spore formation of the microorganism.  
   
   
       7 . An anti-deterioration agent comprising an antioxidant material, wherein the antioxidant material contains a flavonoid aglycon and vitamin C, and the flavonoid aglycon is eriodictyol and/or diosmetin obtained by treatment of a raw material containing flavonoid glycosides derived from lemons, limes, or sudachis to form the aglycones thereof.

A food or beverage comprising an antioxidant material, wherein the antioxidant material contains a flavonoid aglycon and vitamin C, and the flavonoid aglycon is eriodictyol and/or diosmetin obtained by treatment of a raw material containing flavonoid glycosides derived from lemons, limes, or sudachis to form the aglycones thereof.  
   
   
       9 . A food or beverage comprising an anti-deterioration agent, wherein the anti-deterioration agent contains an antioxidant material, the antioxidant material contains a flavonoid aglycon and vitamin C, and the flavonoid aglycon is eriodictyol and/or diosmetin obtained by treatment of a raw material containing flavonoid glycosides derived from lemons, limes, or sudachis to form the aglycones thereof.
